About Us
Mad Yolk Farm is a regenerative farm located in East Co. Galway. Read on to learn more about how we began and what we do.
Mad Yolk Farm is run by Brian Dilleen, a first-generation farmer from Galway City. After training in regenerative farming in Sweden with Richard Perkins, he came home to Galway to start Mad Yolk Farm. Originally based just outside Galway city, Brian moved the farm to Craughwell, Co. Galway in 2020. It is now a thriving working farm, supplying the local community with pasture-raised eggs and chemical-free vegetables from its honesty farm shop. The farm also boasts a wood-fired sauna, open 6 days a week, and an event space where a range of classes, retreats and events are held throughout the year. Visitors are welcome to take a wander through our beautiful sensory garden, polytunnels and market garden.
Our Ethos
We believe in giving back to the community and to nature. We aim to produce the best of eggs and seasonal produce using sustainable and regenerative farming methods.
Mad Yolk Farm is a diverse mixed farm, a hub of education and learning, a space where people can come to relax and reset, a destination where people can source real food, and a venue where people can connect, meet new people, and learn new skills. We believe that our farm is a feasible, sustainable template for Irish farming in the future.
